Pan Pizza in Chicago

For many people, the city of Chicago, Illinois brings to mind images of wind, city life, and, of course, deep-dish pizza. Tourists and locals alike love to hunt for and taste test the best pizza recipes in the city. Chicago has become incredibly famous specifically for the idea of deep-dish pizzas, but individuals in the city can enjoy a variety of signature pies anywhere they go.

Pequod’s Pizza in Chicago has gained and maintained a huge following as one of the most legendary, and delicious, pizzerias in the area for over 50 years. Here are just a few of the unique secrets, services, and recipes that make Pequod’s pan pizza a Chicago favorite.

The Most Delicious Pan Pizza in Chicago

Pequod’s famous pan pizza remains its most notable and famous pizza recipe and embodies the authentic Chicago style. Our pan-style pizzas with their signature caramelized crust were the first to put us on the map over 30 years ago. Locals, tourists, critics, and pizza enthusiasts have delighted in and raved about our original and hand-crafted caramelized crust pan-style pizza creations for years. If you’re looking for the best authentic Chicago deep-dish baked to perfection, Pequod’s Pizza is eagerly awaiting your order and we’re constantly working to provide you with our award-winning pizzas and signature dishes.

All great pizza starts with a great crust, and we at Pequod’s have a bit of a reputation for ours. When we say “crust,” we’re referring to two things. First is the baked dough that composes the bottom layer of the pizza. Our bottom crust is different from a lot of other deep-dish joints, as we prefer a more pillowy texture to a crumbly one.

The second type of crust we mean is our signature cornicione of caramelized cheese. When we press our handmade dough into the pan, we don’t push it all the way up the sides. We arrange slices of mozzarella so that it lays against the pan’s walls. In the oven, the heat caramelizes the cheese, producing a crispy, lacy edge and emphasizing the sweeter, nuttier notes of the dairy. Many have described the result as a “halo of goodness.”

Of course, before baking, we have to assemble the rest of the pie. After layering the cheese, we ladle on a generous heaping of our bright and tangy sauce, which brings a hint of sweetness that cuts through the richness of the cheese. Then we layer on the toppings, which actually go on top. If you don’t know what you want, we’d recommend pepperoni. You can’t go wrong with a classic.

After baking the pie, we run a thin spatula around the edge to make sure you get every last bit of that cheesy cornicione. When you finally see your slice on the plate, you know you’re in for a great bite. Grab a fork and knife and work your way from point to edge. Some pizza eaters, elsewhere in the world, skip the cornicione. At Pequod’s, you won’t want to do that.
